Here were are, the week of “Turkey Day” and you’re probably checking and rechecking to see that you have all you need for the big day tomorrow and the menu you’re serving. What did you decide about dessert? Most everyone will have pie, either pumpkin or pecan. Some are having sweet potato pie or some other dessert altogether.
If pie is on your menu, and it’s pumpkin, I’d like to offer a suggestion to give it a new flavor. If you like apple butter, then you’re sure to like “Apple Butter Pumpkin Pie”! This pie gets a flavor boost from this richly-spiced condiment and goes so well with pumpkin.
In the event you’re not familiar with apple butter, it’s a sweet mixture of apples and spices. Not to be confused with applesauce, it a creamy spread that’s great on any bread. I enjoy it on a peanut butter sandwich! It’s found in the jam and jelly section of most food stores. Some cooks make their own apple butter and if you do, then you’ll be taking “fresh and homemade” to the max!
As you review the ingredients for this pie, it’s not much different from a regular pumpkin pie recipe, with the apple butter being the exception. All the ingredients are combined and poured into your pie shell. It goes into the oven and in about 40 minutes, you have a wonderful pie that’s great for any fall day! This recipe is even easy enough for a beginning young cook to make. If they would like to help in preparing the holiday meal, this would be something good and easy they could make with little supervision.
This pie is great served plain, but it’s especially good with whipped topping or whipped cream. If you can afford the calories, try some vanilla ice cream with it! No matter how you serve it, it’s going to be a good dessert!

APPLE BUTTER PUMPKIN PIE
1 cup apple butter
1 cup prepared pumpkin
1/2 cup firmly-packed brown sugar
1/2 teaspoon salt
3/4 teaspoon cinnamon
3/4 teaspoon nutmeg
1/8 teaspoon ginger
3 eggs, beaten
3/4 cup evaporated milk
1 9-inch pie shell, unbaked
Preheat the oven to 375 degrees. Have the pie shell ready and set it aside. Combine the remaining ingredients in large bowl and mix thoroughly. Turn into pie shell and bake for 40 minutes or until firm in the center. Let cool. Serve plain or with whipped topping. Yield: 6-8 servings.
