My neighbor gave us a jar of homemade applesauce. I checked looked through the cookbooks and recipes of my mothers and discovered the ideal recipe. This is an applesauce cake with a hot homemade caramel sauce poured over the top. The raisins are soaked in either warm water or brandy. The liquid plumps the raisins up and if you use blackberry flavored brandy, it will provide your cake with a delicate blackberry flavor.
Applesauce Cake with Hot Caramel Sauce
- 1/4 c. warm water or blackberry flavored brandy
- 1 c. raisins
- 1 c. butter
- 2 c. sugar
- 2 eggs
- 2 c. applesauce
- 1 tsp. vanilla
- 2 Tbs. baking soda
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 3 c. flour
- 1/2 nuts (Optional)
Preheat oven to 350° F. Grease and flour the bottom of a 13 x 9 cake pan.
In a small bowl, soak the raisins in the warm water or brandy. Set aside for later.
Cream the butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each. Mix in the applesauce and vanilla.
Turn the mixer to the lowest speed. Add the baking soda, cloves, cinnamon, and nutmeg. Mix thoroughly. Add the flour, mixing only until combined. Do not over-mix because this can make your cake tough.
Add the raisins and remaining liquid along with the nuts to the batter. Stir with a spoon to incorporate.
Pour into prepared pan and bake at 350° F. for 45 to 50 hour or until the cake is done. To test the cake, insert a toothpick into the center. If it comes out clean, the cake is done. You can also gently touch the top of the cake. If it springs back, the cake is done. Prepare the hot caramel sauce right just before or just as the cake comes out of the oven. The cake needs to be warm when you poor the caramel sauce over the top.
Hot Caramel Sauce
- 1/2 c. butter
- 1/2 c. brown sugar
- 1/2 c. granulated sugar
- 1/2 c. cream or evaporated milk, (Do not dilute)
- 1 tsp. vanilla
- 1 Tbs. flour
Combine the ingredients in a heavy saucepan. With the heat on medium, cook and stir the ingredients until it comes to a boil. Lower the heat and simmer for 1 minute stirring constantly.
Poke holes over the top of cake with a fork. Pour the hot caramel sauce evenly over the cake.
Serve slices of cake either warm or allow the cake to cool. This cake is perfect for an afternoon snack, or to serve with tea. Cover the cake and it will stay moist for days and you can reheat it in a toaster oven.
