Do you know of anyone that doesn’t enjoy a freshly baked cookie right from the oven? I would say that this is one time where a little bit of the kid in us shines through! Cookies are a big favorite for everyone and I’ve discovered that everyone has a favorite cookie. However, I’d like to pass along a cookie that you may have not heard of before, which is for “Pineapple Cookies”. This is a unique cookie that produces a chewy, tender cookie that is wonderful, especially when they’re warm from the oven!
To make these, you begin with creaming shortening and sugar. To this, you add an egg and some lemon extract. The lemon extract adds a lot of flavor to these cookies and goes well with the pineapple. You now combine dry ingredients, which are flour, baking soda and baking powder. This is added to the creamed mixture to form a dough. Finally, the crushed pineapple goes in and is stirred in thoroughly. Now, the dough is dropped by the teaspoon onto greased baking sheets. These are baked at 375 degrees for 10-12 minutes. These cookies will be light brown. After they rest on the baking sheet for a short time, these are removed to cooling racks. You’ll now have about 6 dozen cookies that are hard to keep out of!
In creaming the shortening and sugar for this or any cookie recipe, it’s not as important to cream as long for cookies as you would for a cake. Since the structure for cookies is very different, creaming won’t have to be done as much as a cake requires. Cream only long enough to make this mixture fluffy, then proceed with the recipe.
Instead of greasing the baking sheets, you can use aluminum foil or baking parchment to line the baking sheets. Once the cookies are all baked, simply throw away the foil or parchment and wipe off the pan. It’s now ready to be stored and you’ve saved time and trouble having to wash the baking pan.

- 1 cup vegetable shortening
- 1-1/2 cups granulated sugar
- 1 egg
- 1 teaspoon lemon extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 small flat can crushed pineapple, NOT drained
Cream together the shortening and sugar until fluffy. Add the egg and lemon extract and cream well. Combine the dry ingredients and gradually add to the creamed mixture. Stir in the crushed pineapple and its juice, stirring until well combined. Drop by teaspoons onto greased (or lined) baking sheets. Bake at 375 degrees for 10-12 minutes. Allow cookies to rest for about two minutes then remove to a cooling rack to cool completely. Yield: about 6 dozen cookies.
