The Art of Sabrage, the technique for opening a Champagne bottle using a saber, is center stage on Thursday, Dec. 4 at DaVine Food & Wine in Dana Point. This is a festive, ceremonial way to “pop the cork” to celebrate special occasions. Learn the art yourself. The event will be held from 6:30 to 8:30 p.m. at DaVine, located in Dana Point Harbor at 34673 Golden Lantern St. Cost is $50 per person. The pricing option is available for couples (any two people) for $80 per couple.
According to legend, Napoleon said, “Champagne! In victory one deserves it; in defeat one needs it!” He encouraged the saber technique among his elite cavalry upon their triumphant return from victories in the battle.
The event includes a Champagne Tasting Flight of three sparkling wines, one cheese and chocolate pairing, sobering training and certification for one, and 1 bottle of Champagne to “Saber and Enjoy.”

Marccellino Cosio of Young’s Market will be the instructor of the Art of Sabrage. The saber is slid along the body of the bottle in order to break the neck away from the bottle, leaving on the base open and ready to pour.
