Brand name frozen entrees can get expensive, especially vegetarian items. Safeway Select, the generic brand found in supermarkets like Vons, offers a vegetarian frozen Triple Cheese Enchilada entree at a fraction of the price of some other national brands. At $1.99 a pop, it’s an affordable freezer basic to stock up on. But buyer beware: as the saying goes, “you get what you pay for.”
The entree is microwavable, making it quick to prepare, but rather visually unappealing due to the generous amount of suiza sauce. The enchilada is nice and soft with big corn tortilla and cheddar cheese flavor. It is “stuffed with Cheddar and Swiss cheeses, chiles, onion, and corn” but the chiles and onion get lost in the suiza mix. The third cheese in the Triple Cheese is Monterey Jack which is sprinkled on top and, also, easy to miss.
Along with the enchilada, the entree features a side of “Mexican style” rice with corn and beans. The rice was unexpectedly soft, as other microwavable entrees containing rice sides seem to have a tendency to dry out and toughen the rice. However, even with all of the suiza sauce, the rice still lacks flavor.
Overall, for the price point, Safeway Select Triple Cheese Enchilada is a decent value for the quality. Adding a few additional, easy ingredients at home, such as fresh jalapeno, chopped cilantro, or extra onion, would go a long way.
