Winter time is a great time to enjoy some chili, fragrant with chili, cumin, tomato and other seasonings, your home will smell wonderful! There are various ways to serve chili: In a bowl, chili dogs, Frito chili pies, chili on cornbread muffins, chili served over spaghetti among other ideas.
The recipe bellows allows for a little bit of a spicy hot bite. If you prefer hot-hot, add more of the Special Chili Seasoning and/or a few dashes of hot sauce. You can even replace the regular tomato juice with the spicy version.
This recipe can be doubled to make more servings as chili is delicious leftover. You can portion chili into freezer containers to save for other meals.
Chili Con Carne
- 2 T. canola oil
- 2 lbs. ground beef (90% lean)
- 1 medium size yellow or white onion (diced)
- 1 clove garlic (minced)
- 1/4 c. Special Chili Seasoning
- 1-1/2 c. beef broth
- 1 regular size can tomato sauce
- 1 regular size jar of tomato juice
- 1 can of Rotel
- 1 can dark red kidney beans
- Shredded cheese
- Sour cream
- Green onions (thinly sliced)
In large Dutch oven pan add canola oil to heat up over medium heat. Add in ground beef, brown for about 10 minutes, then add onions and garlic; stir. Continue to cook over medium heat until meat is no longer pink and onions are translucent.
Add Special Chili Seasoning, stir to distribute throughout meat. Add beef broth, tomato sauce, then add tomato juice and can of Rotel; stir until well blended. Cover and cook over medium heat for 20 minutes, then lower heat to low-medium. Continue cooking for another 30-45 minutes. Add beans; stir, replace cover and continue cooking for another 30 minutes. If you like your chili not so thick, add 1 to 1-1/2 cups of water.
Serve topped with shredded cheese, sour cream and green onions.
Special Chili Seasoning:
- 1/2 c. chili powder
- 1/4 c. red pepper flakes (crushed)
- 1/4 c. dried minced onion
- 1/4 c. garlic powder
- 2 T. white sugar
- 1/4 c. cumin (ground)
- 1 T. salt
- 1 T. basil (dried)
- 1/2 T. black pepper
Combine all ingredients together and store in an airtight container. Recipe can be doubled to make a larger amount of seasoning.
